Carrot Cake Bliss Balls
(use organic where possible)
1 to 2 cups shredded carrot
1 cup almond meal
1/2 cup virgin coconut oil melted
1/2 cup pumpkin seeds or sunflower seeds depending on phase
1/2 cup flaxseeds or sesame seeds depending on phase
1 cup desiccated coconut
8-10 soft dates
Small knob of fresh ginger
1-2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 cup walnuts
1 teaspoon vanilla
A pinch of sea salt
A squeeze of lemon juice
Method
Blend fresh ingredients into a paste first. Then add dry ingredients, pulsing until it comes together. Add more coconut oil or lemon juice if the mixture is too dry, or more almond meal or seeds if too wet. Roll into balls and coat with coconut.
Store in the fridge or freezer.
